Introduction to Taco Soup

Taco soup is both a delicious and satisfying meal. And you can add or delete ingredients to suit your taste. I've been making this recipe for years and have had nothing but positive comments. Although this particular recipe calls for meat, if you're a vegetarian (like me), simply leave out the meat and use soy products instead. Or just make the soup without any meat or soy. It will still be a mouth-watering meal.

There are endless variations for taco soup. It's fun to experiment and get creative with this filling and very tasty treat. Once you have all your ingredients together, it takes no time at all to prepare.

vocalcoach shares her Tennessee Taco Soup recipe

Tennessee Taco Soup - Serves 16

  • 2 lbs. ground beef or turkey
  • 2 small onions, chopped
  • 4 cloves minced garlic
  • 2 packages mild or original taco seasoning mix
  • 2 cans Rotel Tomatoes (keep mild for this)
  • 2 16 oz. cans tomatoe sauce
  • 8 cups water (I use filtered)
  • 2 cans whole kernel corn, drained
  • 2 cans dark red kidney beans, drained
  • 2 cans black beans
  • 2 7 oz. chopped green chilies (mild or hot - but I'd go mild if I were you)

Brown the meat with onions and garlic in about 2 tbls. of oil. (I use olive oil, but any will do) Drain well. Add other ingredients in order given.

Simmer on low for 30 minutes or longer. Serve with shredded cheese, tortillas, tortilla chips or fritos.

This is one of my favorite dishes for parties and family gatherings. Guests can dish up the soup into a festive bowl and add the cheese and chips as desired. Always a big hit!

Soup has been around for thousands of years. Its hard to imagine that our very early ancestors were robbed of the pleasure of eating certain plants just because boiling water was unheard of. They also were unable to eat the bones of animals or benefit from the nutritional value of these bones.

Soup can be comforting and soul warming. There's just nothing like a nice hot cup of soup on a cold wintery day. And when we catch a "bug" of some kind, home-made chicken soup tastes good when nothing else does.

Rules for serving soup

Soup just can't be served without the following rules:

  • Must be served hot ( or to individuals preference )
  • A napkin is a must ( or in my case, a bib )
  • Salt and pepper available ( but don't think you need it with taco soup )
  • Ice water, upon request
  • Serve with a big smile
  • And serve with love

Famous Soup Quotes

Soup is a lot like a family. Each ingredient enhances the others; each batch has its own characteristics; and it needs time to simmer to reach full flavor .
Marge Kennedy

What does good in bed mean to me? When I'm sick and I stay home from school propped up with lots of pillows watching TV and my mom brings me soup - that's good in bed .
Brooke Shields

Whats a soup kitchen ? - Paris Hilton

When I was having that alphabet soup, I never thought it would pay off . - Vanna White

“Cold soup is a very tricky thing and it is the rare hostess who can carry it off. More often than not the dinner guest is left with the impression that had he only come a little earlier he could have gotten it while it was still hot.”
Fran Lebowitz, journalist

“Good soup is one of the prime ingredients of good living. For soup can do more to lift the spirits and stimulate the appetite than any other one dish.”
Louis P. De Gouy, ‘The Soup Book’ (1949)

“Soup is the song of the hearth... and the home.”
Louis P. De Gouy, ‘The Soup Book’ (1949)

As much as I love these quotes, the one that will forever remain with me is:

(Set to music)

Mmmmm good

Mmmmm good

That's what campbells soup is

Mmmmmmm...good.

Taco Soup! Mexican food is something that I grew to love when I was in the US for exchange. It is something I always miss eating as it is uncommon to find Mexican food where I am. This hub has just stirred an intense longing for anything mexican! I think I should try your recipe when I clear this wave of deadlines at school. It's funny cause your recipe is for 16 people! Love this hub! So glad you wrote it, cause it brings back sweet memories for me. =)

This sounds and looks so good that I know I will be making it on the first really cold, damp day. I can think of various ways to make it different for each presentation. There are big cornbread lovers in my family (I'm one) so some nice warm cornbread would be great. A little sour cream right in the middle on top ...oh, the possibilities. Thank you for this one. I know it will become a new family favorite.

I can actually taste this soup and I want more!

nenytridiana - If you serve this soup wearing a "sexy" little dress, I doubt that your husband will ever even taste it! :):)

This looks and sounds delicious. I will make it with texturized vegetable protein. And I just loved the soup quotes you included. What a great idea. The next cold snap that hits us will be a reason to make this filling and warming soup.

This is real similar to a recipe that I have made that I know in total uses 8 cans of food in total. I have to say though, that your recipe looks much better with the meat, onion and garlic, as well. I am going to bookmark this. Voted up and useful.

SuzieQ - I love most mexican food, but limit myself as I like to keep an eye on the calories. :) That's one reason I like this soup - I can make it almost calorie free...without the chips or tortillas.

This looks terrific. I love taco soup. My wife is a vegetarian. Do you have a recommendation on what to add instead of ground beef or turkey?

vocalcoach 6 months ago

KaraokeGuy - I am also a vegetarian. I simply leave out the meat. I sometimes add couscous or even chopped eggplant instead of meat. Thanks.

PDXKaraokeGuy 6 months ago

couscous sounds like a great idea! how much would you use in that recipe?

vocalcoach 6 months ago

I add about 1 cup. Sometimes I make the Couscous separate and serve it in a bowl to be added, along with the cheese, etc.
