Cabbage has been found to be associated with lower incidence of cancer, especially lung, stomach, colon and prostate cancer. Here are more benefits.

Right up front, I want you to know that you can add or delete any of my recipes vegetables, spices and such. However, you cannot delete the cabbage! :-)

  • 1/2 medium head cabbage, chopped
  • 4 stalkscelery, cut into small slices
  • 1sweet onion, finely diced
  • 4 large carrots cut into small slices
  • 2 large potatoes, peeled and sliced
  • 1 14.5 oz can organic tomatoes
  • 1 1/2 cups tomato-vegetable juice cocktail
  • 3 cups vegetable broth
  • 1 14.5 oz chicken broth (delete if vegetarian)
  • 3/4 cup ketchup or 1 can tomatoe paste

Note: If you like spicier flavor, either add ginger root (small amount fresh) or cayenne pepper (just a little will do).

Suggestions: You can also add kale - wash thoroughly (very healthy) and or okra and perhaps a can of corn.

Sprinkle a little parmesan cheese on top of servings bowls.

Place the cabbage into an 8-qt soup pot. Add carrots, celery, potatoes and any other veggies you choose. Add onion and ketchup or tomatoe paste. Next, add chicken and vegetable broth, adding water to empty containers and cover. Bring mixture to a boil and simmer for 2 to 3 hours.

I like to serve with a loaf of french baguette sliced.

This recipe freezes well for a quick dinner when you need one.

So now you have learned the 14 healthy reasons to love your cabbage - a super food. And if you want to lose a pound or two, this is a good way to get started and you can eat all you want.

I wish you all very good health and enjoy eating your cabbage.

Hi, vocalcoach.

There is in fact a diet which uses cabbage soup. Immediate weight loss if that is the only thing you have for 4 days. I tried it a long time ago. I lasted one day...or two..I think two.

I had no idea it has so many things in it..so thank you, vocalcoach for this useful and beautiful hub.

I used cabbage in cooking as required by traditional recipes like pork stew, etc. I didn't know this vegetable is a super veggie for all the health benefits you mentioned. I like it blanched, raw, or cooked. This time I'll love it more! Thanks for sharing this information.

I didn't know cabbage held all that for us. I have spirolina and/orchlorella every day for my "greens". I'm some concerned about some foods not having the nutrients they had years ago but have less as years go by. I live alone so I don't cook a lot. I try to get to a "healthy salad bar" a couple times a week or more. There are so many cole slaw recipes and I love all of them. I love sauerkraut and kimchee too.

I love to watch my weight so I might be using any and all your recipes! Thank you Ma'am!

Hi Micky - Good boy! Pop-eye says "eat your spinach". Vocalcoach says "eat your cabbage". You sound like you take good care of your body. Kimchee, I learned to love while living in Hawaii. My daddy and I used to eat sauerkraut together. All good stuff! Blessings to you Micky.

I've never heard of cabbage soup, but I do love coleslaw.

vocalcoach Hub Author 17 months ago

Betty - You must try the soup. You can basically use anything for stock. I am making a pot of cabbage soup right now and using Trader Joes Roasted tomatoe and red pepper soup which comes in a box. Adding, potatoes, celery, carrots. onion and some garlic. We are getting some snow flurries today, so this soup will tast yummy!

I wish you were her and you could have a nice bowl of soup and sourdough bread with me. :-)

I knew all of this, but sadly I don't take nearly enough time to eat as healthy as I should be a large portion of the time. Then all of the sudden it seems I will eat fairly well for the other portions. I'm bookmarking this, very useful, voted way up. Hey, I actually have always liked eating cabbage anyway. A.B.
