Butternut squash is the queen bee of winter squash. You can bake it, boil it, mash it, even stir fry it. It's the gateway squash, the squash for people who aren't so sure they like squash.
It is a good source of fibre, vitamin C, manganese, magnesium, and potassium. . Winter squash, butternut, acorn squash and pumpkins are all in the same family. High in fiber, nutrient dense and about 63 calories a serving with no fat, the squash family can be enjoyed often.
Winter squash, unlike its summer equivalent, can be harvested very late into the fall, has a longer storage potential, and still provides an outstanding variety of conventional nutrients. Winter squash emerged from our food ranking system as an excellent source of votamin A (in the form of beta-carotene). In addition, winter squash emerged as a good source of folate, omega-3 fatty acids, vitamin B1, copper, vitamin B6, niacin-vitamin B3 and pantothenic acid.
About Butternut Squash
Butternut squash (Cucurbita moshata), also known in Australia and New Zealand as Butternut pumpkin, is a type of winter squash. It has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer. It grows on a vine. The most popular variety, the Waltham Butternut, originated in Stow,Massachusettes, on what is now the Butternut Farm Golf Club.
Butternut squash is a fruit that can be roasted and toasted and also be pureed (to make a soup) or mashed into soups, casseroles, breads, and muffins.
In Australia it is regarded as a pumpkin, and used interchangeably with other types of pumpkin.

This butternut squash recipe is easy and flavorful -- just split the squash, scoop out the seeds, season, and bake.
Ingredients:
· 2 small butternut squash
· melted butter
· cinnamon sugar
Preparation:
Brush a jelly-roll pan with butter and heat oven to 350°.
Carefully cut each squash in half lengthwise and scoop out seeds and soft fibers with a spoon. Brush the inside of each squash with butter; sprinkle with cinnamon sugar. Place squash halves, seasoned cut side down, in the prepared pan. Add about 1/2 cup water to the pan. Bake for 1 hour to 1 hour and 20 minutes, or until the squash is tender. Serve halves immediately or scoop the squash out into a serving dish and discard the skin.
Serves 4.
This next recipe, you just have to try. These fresh, crispy, slight sweet butternut squash french fries are mouth-wateringly delicious and astoundingly easy to make. Healthy french fries — a dream come true!
Weight Watchers Butternut Squash French Fries Recipe
Ingredients:
- 1 whole butternut squash
- 1 tbsp Kosher salt
- Non-stick cooking spray
Directions:
Preheat oven to 425 degrees. Cut butternut squash in half first, and then peel it and remove all seeds. Then, slice it up into french fry like shapes. Just make sure the slices aren’t too thick, as this will prevent them from getting crispy. Spray a backing skeet with non-stick cooking spray. Then, take a large bowl, throw in the french fries and toss with some non-stick cooking spray, until all fries are evenly coated. Then, so the same thing with the kosher salt. Make sure all your fries are well coated with the salt. Now, spread out your fries evenly on the baking sheet. Make sure no fries are on top of each other as this would prevent even cooking. Place in oven and bake for about 40 -45 minutes, flipping the fries over once, halfway through. Fries are done when the edges start to turn golden brown and the fries are looking good and crispy. Enjoy!
PS…served with ketchup, these babies are SOOOOOOO good!!!
*TIP: Because all butternut squashes are not created equal, I suggest weighing your french fries first, before you cook them, in order to determine how many servings will be in your entire recipe.
Serving size = 5 oz of squash (uncooked)
Each serving = 1 Weight Watchers Point
Vocal Coach mashed potatoe squash. Yes, it is my own creation which will be obvious when you see how fast and easy this is. (No - it is not me that is fast and easy, its the recipe).
Ingredients:
- 1 whole butternut squash, a pinch of sea salt, powdered cinnimon, sugar or stevia to taste and as much butter as your waistline can stand.
Cut butternut squash in half first, and then peel it and remove all seeds. Cut it into medium size squares for faster cooking.
Boil (I'm picky, so I use purified water) until very tender for mashing.
Drain off water and pour squash into a serving bowl.
Using a fork (or hand masher) mash squash lightley, adding butter to the mixture. Sprinkle a pinch of salt (I personally avoid salt and it is still delicious), ground cinnimon and sugar or stevia. Mix very lightley, serve and enjoy. Adding raisens is delightful.

Phytonutrients that Promote Optimal Health
Although not as potent as root vegetables like burdock, garlic oronion, winter squash have been found to have anti-cancer type effects.Phytonutrient research on squash is still limited, but some lab studieshave shown vegetable juices obtained from squash to be equal to juicesmade from leeks, pumpkin, and radish in their ability to prevent cellmutations (cancer-like changes).
Supports Men's Health
In research studies, extracts from squash have also been found to help reduce of a symptoms condition occurring in men called benign prostatic hypertrophy ,or BPH. In this condition, the prostate gland becomes problematicallyenlarged, which can cause difficulty with urinary and sexual function.Particularly in combination with other phytonutrient-containing foods,squash may be helpful in reducing BPH symptoms.
Promote Lung Health
Consuming foods rich inbeta-cryptoxanthin, an orange-red carotenoid found in highest amounts in pumpkin, corn, papaya, red bell peppers, tangerines, oranges and peaches, may significantly lower one's risk of developing lung cancer. A study published in Cancer Epidemiology, Biomarkers and Prevention reviewed dietary and lifestyle data collected from over 60,000 adults in China and found that those eating the most crytpoxanthin-rich foodsshowed a 27% reduction in lung cancer risk. When current smokers were evaluated, those who were also in the group consuming the mostcryptoxanthin-rich foods, were found to have a 37% lower risk of lungcancer compared to smokers who ate the least of these health-protectivefoods..
Additionally, if you or someone you love is a smoker, or if you are frequently exposed to secondhand smoke, then making vitamin A-richfoods, such as winter squash, part of your healthy way of eating may save your life, suggests research conducted at KansasStateUniversity.
While studying the relationship between vitamin A, lunginflammation, and emphysema, Richard Baybutt, associate professor of nutrition at KansasState, made a surprising discovery: a commoncarcinogen in cigarette smoke, benzo(a)pyrene, induces vitamin Adeficiency.
Baybutt's earlier research had shown that laboratory animals fed a vitamin A-deficient diet developed emphysema. His latest animal studies indicate that not only does the benzo(a)pyrene in cigarette smoke cause vitamin A deficiency, but that a diet rich in vitamin A can help counter this effect, thus greatly reducing emphysema.

Help Fight Colon Cancer - Eat Squash
Studies have also shown that a good intake of beta-carotene helps to reduce the risk of colon cancer, possibly by protecting colon cells from the damaging effects of cancer-causing chemicals.
Another consideration, beta-carotene's anti-inflammatory effects may help to reduce the severity of conditions like asthma, osteoarthritis, and rheumatoid arthritis, which all involve inflammation.
The folate found in winter squash may help to prevent certain birth defects if taken by women before and duringpregnancy. Folate is also needed by the body to break down a dangerous metabolic by product called homocysteine ,which can directly damage blood vessel walls. Since high levels of homocysteine are associated with an increased risk for heart attack and stroke, getting plenty of folate in the diet is a good idea. Folate has also been shown to help protect colon cells from the effects of cancer-causing chemicals. In fact, diets high in folate-rich foods are associated with a significantly reduced risk of colon cancer,especially in people who have a history of alcohol use.
Potassium found in winter squash may help to lower blood pressure, and the vitamin C may be able to reduce the severity of conditions like asthma, osteoarthritis, and rheumatoid arthristis as well as prevent the progression of conditions like atherosclerosis and diabetic heartdisease. Squash is high in fiber to help in fighting Heart Disease and Colon Cancer.

One of my and my husband favorites. I like with with butter and Parmesan cheese. I had no idea it was promoted lung health. I wonder if it would help my asthma.

msorensson - What better reason to cook than for yourself? If you have a "Trader Joe's" or the equivilant, you can find butternut squash all ready to just stick it in a pot and boil. It comes peeled and cut into cubes. All organic and fresh. Easy fixin's! :-)

Hi VocalCoach! This is a great hub about squash and health. I love butternut squash, but I have one problem...I can't cut the dern thing. It's like a rock. I've read that softening it in the oven for a few mintues works, but have yet to try it. Do you have any tips for saving fingers and thumbs when chopping this lovely vegetable?

I can't figure out which recipe I want to try first! Those fries sound delicious and easy, but I love it pureed or mashed as well, squash is so versatile and delicious. I was interested in the comment about lung inflammation, I'm curious if this could be beneficial for asthma as well. Certainly can't hurt. I'll be serving squash with dinner, thanks for some great ideas!

• Butternut Squash Soup
•
• 2 tablespoon(s) unsalted butter
• 1 cup(s) chopped onion
• 2 1/2 pound(s) butternut squash, peeled, seeded and cubed (about 6 cups)
• 1/2 Granny Smith apple, peeled, cored and diced
• 3 cup(s) low-sodium chicken broth
• 1 1/2 cup(s) apple cider
• 1/4 cup(s) apple brandy
• 1 1/2 teaspoon(s) salt
• 1/2 teaspoon(s) chopped fresh thyme
• 1/4 teaspoon(s) fresh-ground pepper
________________________________________
Directions
1. Melt the butter in a large stockpot over medium-high heat. Add the onions and sauté until softened, about 5 minutes. Add the squash and apple and sauté for 5 more minutes. Add the remaining ingredients and bring the mixture to a boil.
2. Reduce heat to a simmer, cover, and cook until the squash is tender, about 20 minutes. Remove from heat.
3. In small batches, carefully puree the soup in a blender or food processor until very smooth. Serve immediately or refrigerate for up to 3 days.

Goodness me, this is an awesome Hub! I love winter squashes (and hate the summer variety - squishy, tasteless and nutitionless, in my view!) and especially butternut, which we eat almost every day. I usually mash it just as you have described here. Will try out the baked version soon. And the soup!

In a pre-heated oven, place the halves cut side up in a foil lined baking dish or pan. 3. Generously butter the squash, a little salt, some cinnimom and sprinkle lightly with sugar or stevia.4. I put gobs of butter (the real stuff) on it and a pinch of sea salt, cinnimon with sugar and add about an inch of water in the pan. Yummy. vocalcoach - it turned out fantastic, I am now an official butternut squash fan! As a matter of fact tonight i've just re-heated the leftover half and it is just as good. As far as the olive oil, (of which I am a big fan of), I think you should try it, I just coated it with the virgin olive oil then added some butter just because the recipe called for it. I use more olive oil than butter in most of the dishes that I prepare so for me it's the perfect combination. I could not tell any difference because the taste of the squash was awsome. So maybe give it a try sometime and let us know how you like it. I am looking forward to trying your butternut soup recipe soon. Love butternut squash - the only thing I haven't done with it is stir fry - and I usually stir fry everything. Just bought some from a youth farmer's market - and it is so sweet and excellent - and then the seeds I toasted...

I love butternut squash. It was always on the table as part of our Thanksgiving dinner and many other times. The weight watchers recipe is worth a try. Most of the time, no sweeteners are needed. It is naturally sweet on its own.

Let me tell you how my mom used to make butternut squash. Easier than easy. Cover a baking sheet with foil and spray with PAM.
Cut the squash lengthwise in half. Scoop out the seeds and discard. Place the squash flat-side down on the sheet and bake at 300 degrees until it is soft when you put a fork through it. Remove from oven and turn it over to avoid sticking. Let it cool a bit. Scoop it out and mash in a baking dish. If you are dieting, eat as is. If not, add a little butter.

I eat alot of squash , whether it be yellow , butternut, ,whichever , i eat it a million differant ways , but i have not tried the fries , and im gong too! because ive been wanting a substitute for fries (potatoes) and although i have a recipe for ruta baga fries , and they are good , you have to slice them very thin and deep fry in evoo , and i want something with a little more thickness, i wont get that with the ruta bagas , so i will try yours , thanks for the recipe and the tips! have a blessed day! :)

Hi joe - The first photo was taken off the internet but it looks exactly like my baked squash with olive oil a pinch of turmeric and sprinkled with parsley flakes after it comes out of the oven. I love poppy seeds and have used them to sprinkle over the top of the squash. It works just fine. Thanks for stopping by!
